Stuffed Portabella Mushrooms
Ingredients:
3 packs of Portabella Mushrooms
2 lbs of organic lean ground beef
I yellow squash
1 green squash
1 can of organic tomato sauce
1 teaspoon garlic powder
1 teaspoon of Mrs. dash
1 teaspoon of oregano
1 small box of organic baby spinach
1 tablespoon of coconut oil
1/4 cup of onion
I use a Vitamix to chop my squash and onion it is the best tool I have in my kitchen! You can also use a blender or mini food processor. Saute the onion and squash together with your coconut oil. I use a little of almond oil in my meat and cook the hamburger in the pan. Add your spices, tomato sauce and add the squash last. Saute the spinach in another pan and while the meat is cooking on the stove put the mushrooms on the grill. Takes around 10 min for the meat and the mushrooms. Take the spinach and lay some inside the mushroom and put hamburger on top. Vavoom better than any hamburger you will buy at Mc Donald's!
